Avocado Lemon Lime Plant-based Ice Cream…

You will need:

1/2 large avocado or 1 small. Meat and peal. No seed. Organic avocados are recommended. Make sure to wash the outside of your avocado thoroughly with baking soda and warm water.
1 cup sugar
2 cups water
1/ 2 cup fresh lemon juice
1/4 cup fresh lime juice
1/4 cup shelled pumpkin seeds
1/2 tsp. vanilla
1 Tbsp vodka (prevents ice cream from freezing hard)

Directions: Place all ingredients in a food processor and blend until smooth. Strain through nut milk bag (important). Churn in ice cream maker until soft-serve is achieved. Freeze in an airtight container for 3-4 hours. Enjoy!
