This recipe was inspired by my love for a good ole fashioned apple pie.

I love apples in anything…  I don’t need fall weather it can spring…

All I know is that I love apple pie…  And the idea for these waffles caught my eye…

If you’re like me and love apples too…  This recipe will be quick and easy for you to do…

Most importantly you must know…  The waffles are crisp and tender and pillowy like a mound of snow…

The apples are tender and bright with just the right amount of sweet…  And in just about 15 minutes you can be ready to eat..

For waffles you will need:

1 package Quinoa Esta Bakery Waffle Pancake Mix

1 1/3 cup pure apple cider

3 tablespoons non flavored vegetable oil

waffle maker

Directions:  In a mixing bowl add dry waffle mix, oil and apple cider.  Use wire whisk or large spoon to mix until well combined.  Cook according to waffle maker instructions (4 minutes is perfect for my waffle maker).  Makes 3 large waffles.

For apple syrup you will need

2 apples peeled and diced into medium sized pieces

2 cups pure apple cider

1 teaspoon lemon juice

1/2 cup water

1/4 teaspoon salt

1 tablespoon butter of choice

1/8 teaspoon cinnamon

Directions:  Add all ingredients to a sauce pan and cook over medium heat until reduced by half.  Remove from heat and allow to cool.  Enjoy!
