Laura Clarkson’s Recipe
2 cups Quinoa Magic Flour
4 ounces baking unsweetened chocolate
1/2 teaspoon salt
2 teaspoons baking powder
1/2 cup vegetable oil
2 cups granulated sugar
12 tablespoons water
1 teaspoon vanilla extract
Step 1. Place the flour, salt, and baking powder into a bowl and mix with a wire whisk or rubber spatula until combined. Set aside.
Step 2. Place the chocolate, oil, and water in a saucepan and heat on very low until the chocolate is melted (stirring continuously). Remove the chocolate from the heat. Add the sugar and vanilla to the melted chocolate and mix it until it is well combined. Next, add chocolate mixture to the Magic Flour, baking powder, and salt. Use a rubber spatula or large spoon to mix all ingredients together with a rubber spatula until they are well combined and smooth. Cover the bowl tightly with plastic wrap and refrigerate dough for 4 hours.
Step 3. Preheat the oven to 350 degrees F. Line a cookie sheet with a piece of parchment paper. Use a cookie scoop to scoop out cookies. Roll each dough ball in powdered sugar before placing it on a cookie sheet. Leave 2 inches between dough balls to allow for spreading while baking. Place the cookie sheet in the preheated oven and bake for 18-20 minutes. Remove the pan from the oven. Allow cookies to cool completely. Store leftovers in an air-tight container and refrigerate.
