Ginger Spice Cookies

Preheat oven to 350 degrees F

You will need:

2 cups Quinoa Magic Flour

1 cup granulated sugar

2 tablespoons ground ginger

1 teaspoon baking soda

1/2 teaspoon ground white pepper (you can substitute black pepper)

1/4 teaspoon sea salt

1/4 cup vegetable oil ( I like grapeseed oil)

1/2 cup very warm tap water

Instructions:

Place flour, sugar, ginger, baking soda, white pepper and salt in a mixing bowl and mix with hands for 15-30 seconds until well combined.  Add water and oil.  Mix with hands or rubber spatula until dough is well incorporated.  Set aside and let rest for 10 minutes.  Line a baking sheet with parchment paper.  Use cookie scoop to scoop 12 cookies onto cookie sheet.  Leave  2 inches between each cookie.    Bake in oven for 15-18 minutes.  Cookies should be golden brown.  Remove from oven and allow cookies to completely cool.

Cookie glaze:  1 cup confectioners sugar + 1/8 teaspoon ground ginger + 2 1/2 teaspoons water.  Mix until smooth.  Drizzle cookies.  Refrigerate leftovers.
