Nectarine Cobbler Crisp

Recipe Inspiration

So on this particular morning I rose early to watch the sunrise. As I stood there waiting, I noticed two neighborhood cats. One cat was lying on the top of my neighbor’s car looking up. The other was stretched out on a block wall across the street. It was clear that we were all there for the same reason.  We all waited.  Within a minute or two, it was the strike of dawn, and the birds began to sing in unison. It was a powerful moment because it was like being at a symphony.  Dead silence quickly became a musical experience with one strike from the conductor.  I started singing the song “feeling good”.   Right after I sang the dragon fly portion, a dragon fly flew by.  It was all so poetic and magical.  The funny thing is…  I have gotten up many days before sunrise to work or travel, or whatever.  I have never rose early specifically to watch a sunrise. What a difference a day makes.
This Nectarine Cobbler Crisp is fresh like the early morning and sweet like the sound of birds singing.  The taste is bursting with flavor just like the first sight of the morning sun is bursting with light.  Everything about this recipe expresses the sentiment of the day.
Nectarines and peaches are in season, grab a few ripe pounds and give your mouth a reason.  
RECIPE / Preheat oven to 350 degrees F
Filling:
2 lbs. ripe, unpeeled nectarines (washed and cut into thick slices)
1 tbsp. orange juice (fresh is preferred)
1/2 cup granulated sugar
1/4 tsp. salt
1/4 tsp. nutmeg
Directions:  Place all ingredients into a large bowl.  Mix well with large spoon and set aside to rest.  Sugar will draw the juices out of the nectarines to make them extra yummy.

Cobbler Crisp Crumble Topping:
1/2 cup / your favorite granola
1/4 cup granulated sugar
3 tbsp. butter of choice
1/4 tsp. baking soda
Directions:  Place all ingredients in a clean bowl.  Use a large fork to press butter into other ingredients until well combined.  Set aside.

Cobbler Crisp Topping

Assemble and Bake:
Spray a 9X9 or similar size baking dish with cooking spray.  Pour nectarine mixture into baking dish, and evenly spread.  Evenly spread cobbler/crumble mix over nectarine mixture (make sure you cover all exposed fruit.  Place baking dish in preheated oven and bake for 50-55 minutes or until top is golden and and bubbly. Remove dish from oven and allow to cool for 15 minutes before serving.  Serves 6.  Enjoy warm or cold.  Refrigerate leftovers.
