I met you at F & E this past Monday, and I wanted to let you know we baked the frittata last night and it was delicious. My food processor blade was too big to make the quinoa flour, but the Magic Bullet worked perfectly turning it into flour. I had some diced onion in the fridge, blanched the asparagus, added some shredded Jack and some sharp cheddar, and popped it in the oven, and 30 minutes later, there was dinner. Just served it with a green salad. That is so easy. You could add onion, bacon, and Swiss cheese, or chorizo or anything you want. It will be great for breakfast, too.
